I can link you up with such experts and coordinate the team and project. As for myself, I’m a food microbiologist located in Melbourne, with expertise in food safety and quality. My professional experience includes a PhD in food microbiology and biochemistry from The University of Melbourne and CSIRO, postdoctoral work in physical chemistry and materials science at RMIT University, then a research-only academic post at RMIT University in the information systems area where I was hired to contribute my expertise in food science and nutrition to projects concerning food composition databases and grocery retail innovations, including improving customer experiences related to food purchase. Previously, I have worked on projects covering the full spectrum of basic (e.g. molecular mechanisms and regulation of iron metabolism in food spoilage bacteria) to applied science (e.g. reformulating a grain based snack food to maintain similar texture but incorporating healthier ingredients). If you have a product concept or early-stage prototype developed of a food product, I can put together a team that will deliver it to you market-ready. I will oversee it until the first manufacturing run, and then still be available for guidance and advice once you’ve launched. Not only can my teams offer solutions in product formulation and ingredient interactions to attain specific sensory attributes and nutritional profiles as well as shelf-life optimisation, but they can also provide advice on marketing, supply chain/logistics, regularity compliance and more. In addition, they can also offer troubleshooting for food safety and food quality issues from a solid QA and QC perspective.
